A lot of people believe that you shouldn’t flip or move your food around too much on the grill. This probably stems from the desire to create perfect grill marks. If you flip or move your steak more than once, those grill marks obscure or even become muddled.
Grill flare-ups, however, are an even bigger potential problem than less than perfect grill marks. So, you should flip or move your food when you need to, because your primary goal is for even cooking. Move your food around your grill to take advantage of of your space and avoid flare-ups. Its better to have even cooking across your grill even when it comes at the expense of perfect grill marks.
